Welcome to Cook on the Brightside! A little digital space filled with delicious tried and tested (and tasted!) recipes from my own kitchen.

My name is Fiona and what can I say… I love food. Cooking it. Eating it. Staring through a bakery window (looking slightly unhinged) at it. Did I say eating it? Cooking for me is the best kind of therapy and release. Good food can bring friends and family together, be a great icebreaker, be a lovely gift or… destroy a family when you don’t get the spare roastie on a Sunday. Ouch.

I spent 2 years of my life traveling through beautiful Spain, this opened my eyes to all the wonderful ingredients and flavours that were different from back home. I also struggled squeezing into my shorts at the end of those 2 years, I did say how much I love to eat right?! It was there I started to discover a stronger passion for cooking and that only increased with every new destination visited. I had always adored baking from a young age with mum (who is an amazing cook!), but never explored further than cakes and biscuits.

In Spring 2018, before moving to Hampshire, I started posting images of my home cooked grub on Instagram. After receiving such a lovely response, my fiancé encouraged me to start my blog. I am not a professional and would never claim to be, I just enjoy good food, trialing recipes, creating my own and having a laugh along the way even if it ends in disaster.
